New Year’s Cake

I love creating new traditions. I first baked this cake for a solo NYE in 2020 and it’s now become something “I do”. Chocolate and ginger cake found on the Irish Times website with my own *variations*. I didn’t have any stem ginger so used a little more ground ginger. Didn’t have enough cocoa so added a slab of melted dark chocolate. Didn’t fancy layers so popped it in a loaf tin (and took deep breaths while it took twice as long to bake). And instead of a ginger icing topping I slathered it in buttercream because, you know. Topped with white chocolate stars and 100s and 1000s to finish and there you have it, a yummy, indulgent New Year’s Cake. I hope I’m still making it every New Year’s Eve until I’m at least 96. It’s the little things, right?
